Zucchini & Red Bell Pepper Stuffing (Gluten-Free)

Who needs bread when you have zucchini? This one promises great flavor and is a winner even with the pickiest guest.

Ingredients:

  • 1 med. red bell pepper (finely chopped)
  • 5 med. zucchinis (chopped)
  • ½ celery (chopped)
  • 1 med. onion (chopped)
  • 3 TBSP butter
  • ½ tsp dried oregano (crushed leaves)
  • ¼ cups grated Parmesan cheese

Direction:

Coarsely chop all ingredients, then pour the melted butter over the top. Stir in garlic and oregano. Place inside the turkey and roast. Once you’ve removed the stuffing from the bird, put the cheese on top, and it’s ready to serve.

Cranberry Cornbread Stuffing

Fill them up with cornbread and the taste of the holiday season: cranberries! This is sweet, nutty, and will get their mouths watering.

Ingredients:

  • 1 loaf of your favorite corn bread (cut into ½ inch cubes)
  • 8 cups onions (Chopped)
  • 1 ½ cup of dried cranberries
  • 1 cup chopped pecans or walnuts
  • 2 TBSP extra virgin olive oil (a little more if you are placing inside the bird)
  • 1 ½ chicken broth
  • ¼ tsp salt
  • ½ tsp black pepper

Directions:

Mix all ingredients together, then place inside the turkey and roast.

Sage Sausage Stuffing (Gluten-Free)

This recipe does not go into the bird to cook, but it’s a great stuffing to serve with your meal. You even have the option of stuffing the turkey with traditional stuffing and having this as an extra side for your adventurous or gluten-free guests!

Ingredients:

  • 1 cup celery (chopped)
  • 1 cup apples (chopped)
  • 2 cans of water chestnuts (drained and chopped)
  • 1 pack or Jimmy Deans Sage Sausage (YUMMMMM!)
  • 1 tsp cape cod seasoning
  • 1 med. Onion (chopped)
  • 2 TBSP extra virgin olive oil
  • 1 TBSP butter

Directions:

This one may sound odd, but I have never stuffed my turkey with anything else since I began cooking Thanksgiving dinner. It keeps the turkey moist and adds a unique flavor to the meat. Bonus: it’s super simple.

Ingredients:

  • 1- 32-ounce jar of sauerkraut
  • 1 Sweet Onion
  • Sage

Directions:

Drain sauerkraut, and chop the onion. Season with sage and insert into the bird.
